Tried Chocolate-Chocolate Cupcakes recipe yesterday. Found it from cupcakefun website. Made it yesterday late at night while Alyssa was sleeping. Tried one. It was scrumptious!. The texture is so soft, cake-like texture. Very happy with the outcome..but still havent snap pics yet.
Ingredients
2 cups (12 oz.) semi-sweet chocolate chips, divided
3/4 cup (1 1/2 sticks) butter or margarine
1 1/2 cups granulated sugar
3 eggs
2 teaspoons vanilla

1/2 teaspoon salt
1 1/2 cups water

Yield: Makes 12 standard cupcakes.
Directions
1. Preheat oven to 350°F.
2. Melt 1 cup chocolate chips and butter together either in microwave oven or on top of range
over low heat.
3. Stir until chocolate is completely melted. Pour into electric mixer bowl.
4. Add sugar; beat until well blended.
5. Beat in eggs, one at time.
6. Add vanilla.
7. Stir in 1/2 cup flour, baking soda and salt; mix well.
8. Add remaining flour and water; mix until smooth.
9. Pour into prepared pan.
10. Bake 20-25 minutes or until toothpick inserted comes out clean.
11. Sprinkle remaining 1 cup chocolate chips over cupcakes; let stand 2-3 minutes or until chips

12. Gently spread melted chocolate over top of cupcakes.

** I substitute melted choc chips for baking choc. I added choc filling by insert chopped choc in the middle of the batter in the paper cup. Once baked, I added choc chips on top of the cupcakes
